And we, continuing the theme of preparations, today will make a sharp mother-in-law’s tongue from eggplants for the winter. After all, a fruitful summer is so fleeting. The spiciness of this snack is not particularly strong. This is what I cook for the whole family. Fans can include another hot pod in the composition.

My blue ones are long, so I will cut them into whole circles. Some eggplants are thick, so it is better to cut them into semicircles. These will be the “languages”. And we will grind all the tomatoes and peppers in a meat grinder. You can use a blender for this.

Be sure to wear gloves when peeling hot peppers. Then be sure to thoroughly wash your gloves, knife, and cutting board.

I do not list this pepper in the ingredients, as you can use it at your own discretion. I will cook in a large 5 liter saucepan. It will fit the entire set of vegetables:

Preparation:

I won’t peel the eggplants because they are young and soft. We just need to rid them of the bitterness. To do this, immediately cut them into circles and place them in a bowl, sprinkling them lightly with salt. You can cover the top with a plate and press down with pressure. Soon the juice and excess bitterness will come out of them.

In the meantime, we will start cleaning and chopping the rest of all the vegetables. Cut peppers and tomatoes as desired. After all, we will grind them in a meat grinder. We divide the garlic into cloves and peel them. Cut the hot pepper in half and remove the seeds.

Be sure to wear gloves. And then rinse the board and knife thoroughly under running water.

Now we will grind all this stuff in a meat grinder. You can also use a blender, but I prefer my grandmother’s version of cooking.

The little blue ones have let out the juice and are sufficiently salted. We rinse them thoroughly under the tap and let the excess liquid drain.

Now place the eggplant slices in a large saucepan and fill them with the tomato-pepper mixture. All other ingredients go there too. Except vinegar! You don't even need to stir yet. Place on the stove, closing the lid. We will cook over medium heat until it boils.

When it boils, reduce the heat and cook for about 20 minutes. You can open it slightly to allow the liquid to evaporate. You will see how much juice will be released from the eggplants when they boil down. At the very end of cooking, add vinegar, stir and remove from heat.

Do not cook for more than 20-30 minutes, otherwise everything will turn into porridge!

Jars of 0.5 and 0.65 liters are already sterilized in the oven, and the lids are in boiling water. Pack the salad into jars. First, carefully apply the rings so as not to crush them. It is better to do this with a fork or tablespoon. And then pour the marinade to the top with a ladle.

The jars are twisted and placed on the lids. Cover them with a thick blanket until they cool completely. And the next day you can take it to the cellar or basement for winter storage.

Spicy eggplant salad with bell pepper through a meat grinder

This recipe is not much different from the first. It will be without tomatoes, but with ready-made tomato juice. We will cut the eggplants not into circles, but into quarters and fry them in a frying pan. And grind the pepper in a meat grinder.

What we need:

  • 2 kg. eggplant
  • 0.5 kg. sweet pepper
  • 100 g garlic
  • hot pepper (to taste)
  • 1 liter of tomato juice
  • 100 ml. sunflower oil
  • 100 ml. vinegar 9%
  • 100 g sugar
  • 1 tbsp. spoon of salt.

Let's start by preparing the vegetables.

My tomato juice is homemade. I prepared it in advance. You can dilute the juice from tomato paste. This is even better, you can adjust the density.

The eggplant is cut lengthwise and then each half is further divided into two parts. We get quarters like the ones in the photo. These will be "tongues". If your blue ones are large, then cut each one in half.

Eggplant slices are fried in a frying pan with vegetable oil. On both sides until lightly browned. The main thing here is not to overfill the oil, because the blue ones absorb it very well. Add just a little bit at a time, they will absorb, and let them fry.

Place all the slices fried on both sides into a large saucepan. In about 15 minutes you will see all the oil that they absorbed come out of them.

In the meantime, let's move on to the spicy marinade. We peeled the garlic, bell pepper and bitter pod too. We grind all this stuff in a meat grinder with a fine grid.

Boil tomato juice in a saucepan and pour in a mixture of peppers and garlic. Add salt and sugar there and mix everything. Pour this mixture over the fried blueberries and place on the fire.

After boiling, cook over low heat for no more than 15 minutes. And at the very end, pour in the vinegar.

Pack the still hot product into sterile jars and screw on the boiled lids. Place it upside down on a blanket and wrap it for two days. Then you can send it for winter storage.

2. Peel and cut into pieces the bell pepper and a small pod of hot chili. Grind the pepper and peeled garlic cloves in a meat grinder. Add tomato paste and all the sugar to this mixture.

3. After half an hour, mix the blue ones and lightly squeeze the juice out of them with your hands. Place them in a deep frying pan with oil and fry. You can do this in a slow cooker or in a deep fryer.

4. Add a mixture of pepper and tomato paste to the fried eggplants.

Don't forget to add a couple of bay leaves.

5. This mass is stewed on a small fire for about 20 minutes. At the end, add vinegar and mix everything. After another five minutes you can remove it from the heat.

Place the food in sterilized jars and screw on the scalded lids. Don't forget to leave some tasty treats for the family to try.

Although this preparation is considered winter, it cannot be stored warmly, since we will not cook the entire product, we will only fry the blue ones.

By the way, the eggplant slices have already released their juice. It should be squeezed out if possible, and the little blue ones should be sent to fry.

It is better to use a deep fryer for frying. You can load them all into it at once, without unfolding or turning over each circle. And they don’t fry in oil like they do in a frying pan. In just 10 minutes they are ready. The circles are soft, but there is no crust on them.

And immediately, before the little blue ones have cooled down, we pack them into containers. We will fill the sterilized jars one by one. Place a layer of eggplant slices, pour the spicy marinade on top and lightly press down with a spoon. Then the next layer is the same. Repeat until the top of the container.

Make sure that there are no large voids left in the jars.

From this amount of vegetables I got 4 jars of 0.5 liters each. And there's still a little left. Although mother-in-law’s eggplant tongue is intended for the winter, you can try it now. The snack is aromatic, spicy and looks attractive.
