Wash the tomatoes and herbs well under running water; Peel the garlic and cut into slices. Place garlic, horseradish, currant leaves, dill in clean evaporated jars and fill to the top with tomatoes.

Prepare the marinade:

Add honey, salt, pepper, vinegar and cloves to the water. Boil this for 3 minutes. Pour the hot marinade into the contents of the jar and let it cool. Pour into the pan and bring to a boil again. Composition (per 3 l):

  • tomatoes - 1.5–1.7 kg;
  • dill - 2 umbrellas;
  • cloves - 4 pcs.;
  • allspice peas - 4 pcs.;
  • bay leaf - 1 pc.;
  • sugar - 1.5 cups;
  • salt - 20 g;
  • table vinegar (9 percent) - 50 ml;
  • sweet pepper - 150 g;
  • hot capsicum (optional) - 1 pc.;
  • water - how much will go.

Cooking method:

  • Sterilize the jar. Boil a suitable metal lid.
  • Wash the spices and leave them to dry.
  • Wash the tomatoes well, removing the stems and piercing the tomato peel in 2-3 places near the stem with a toothpick.
  • Cut the hot pepper into rings. You can use not the whole pod, but only part of it, if you do not want the canned food to be too spicy.
  • After washing the bell pepper and freeing it from seeds, cut it lengthwise into 4–6 pieces.
  • Place spices and pepper rings at the bottom of the jar.
  • Fill the jar with tomatoes and place pepper strips near the sides.
  • Boil water, pour in tomatoes. Wait 20 minutes.
  • Drain the water into a saucepan, add sugar and salt, cook until the crystals are completely dissolved.
  • Add vinegar and bring to a boil.
  • Pour the hot marinade over the tomatoes and roll up.
  • Turn the jar over and cover with a blanket. Leave to cool in a steam bath for additional preservation.

  • 2 kg cream (tomato variety);
  • 200 g onions;
  • 50 g salt;
  • 50 g apple cider vinegar;
  • 100 g honey.

Evaporate the jars in a steam bath. Wash and dry the tomatoes. Cut the onion into rings. Place the tomatoes in clean, sterilized jars, adding layers of onions. Ingredients for 1 liter jar:

  • 5 – 6 medium tomatoes;
  • 1 pepper (Bulgarian);
  • 2 slices of watermelon;
  • 2 cloves of garlic;
  • 25 g salt;
  • 2 tsp Sahara;
  • 1 tsp citric acid;
  • water;
  • celery branch.

Wash jars and sterilize. Wash the tomatoes, peel the watermelon and cut it into medium pieces. Remove the grains from the pepper and cut into several pieces. First put celery, garlic cloves, tomatoes cut in half, pieces of watermelon and all the loose seasonings into the jar. Pour water at a temperature of 100°, cover with a lid and leave for 7 minutes. For one 3-liter can of canned royal tomatoes we will need:

  1. Tomatoes – 1.5 kilograms.
  2. Cloves – 3 buds.
  3. Allspice peas – 3 pieces.
  4. Hot pepper pod - one small ring.
  5. Bell pepper – the fourth part.
  6. Dill - 1 umbrella.
  7. Garlic – 1 clove.
  8. Vinegar – 1.5 tablespoons.
  9. Granulated sugar - 1.5 cups.
  10. Salt – 1 tablespoon.
  11. Lavrushka - to taste.

Sterilize the bottles, put in dill, 3 types of pepper, cloves, bay leaves. Place tomatoes on top. Fill the bottle up to the neck with boiling water and wait half an hour. Pour the liquid back into the pan and bring to a boil. Add garlic, salt, granulated sugar, and vinegar to the bottle. Pour boiling water into a bottle and roll up. Place it upside down under a blanket for a day.

With honey

Ingredients for canned royal pickled tomatoes:

  1. Tomatoes – 5 kilograms.
  2. Water – 7.5 liters.
  3. Vinegar – 150 grams.
  4. Honey – 450 grams.
  5. Salt – 150 grams.
  6. Garlic – 2 heads.
  7. Black peppercorns - to taste.
  8. Cloves - to taste.
  9. Dill, blackcurrant leaves - to taste.

Rinse all components thoroughly; after cleaning, chop the garlic into small circles. Pre-sterilize the jars. Place garlic, seasonings, herbs from bottom to top, fill the bottles with tomatoes.

Now let's get to the brine. To do this, combine water, honey, pepper, vinegar and cloves in a container. Boil for about 3-4 minutes. After removing from heat, pour the brine over the tomatoes and wait until the liquid reaches room temperature. Pour it back into the pan, boil again for 3 minutes, transfer to jars. Roll them up, cover them with a warm blanket, placing the bottles upside down. After a day you can put it in a place of permanent storage.

With a spicy taste

Cooking spicy tomatoes will require the following ingredients:

  1. Tomatoes – 0.5 kilograms.
  2. Vinegar – 2 tablespoons.
  3. Hot capsicum – 0.5 pieces.
  4. Garlic – 1 clove.
  5. Yellow bell pepper – 1 piece.
  6. Allspice peas - to taste.
  7. Sugar – 100 grams (per 1 liter of water).
  8. Salt – 50 grams (per 1 liter of water).

We sterilize the bottles and add the seasonings. Lay out the tomatoes and sweet peppers, pour boiling water up to the throat. Cover with a metal lid and wait for half an hour. Next, measure out the water, counting the proportions: for one liter of liquid you need 100 grams of sugar and 50 grams of salt. Add to sleep and bring to a boil. Pour acetic acid into the bottle, pour the prepared brine, and you can start seaming. Leave the inverted bottles under a blanket for a day and move them to the cellar.

With honey and onions

The most seemingly incompatible products can be combined to produce delicious dishes. That's what this recipe is. To marinate them, we will need:

  1. Cream tomatoes – 2 kilograms.
  2. Onions – 0.2 kilograms.
  3. Salt – 50 grams.
  4. Apple cider vinegar – 50 grams.
  5. Honey – 100 grams.

We sterilize the bottles, wash the tomatoes and let them dry completely (or wipe them with a towel). Peel the onion and chop into rings. Place the tomatoes in jars, inserting onions into the free space in between.

Let's make the brine: add salt to water (1 liter), pour in vinegar, boil, and after boiling add honey. Let's wait a little longer, then you can pour the marinade into jars, topping up to the very neck. Immediately roll up the jars and put them under a blanket.

Recipe for a liter jar

Liter bottles are the most convenient container for preparing preserves. This is enough for several days - for an everyday table, and for one time - for a holiday. You have time to enjoy the taste, but not for so long that the dish gets boring or goes bad.

So, how many ingredients do we need for one such 1 liter jar? We count:

  1. Tomatoes – 0.5 kilograms.
  2. Water – 0.5 liters.
  3. Vinegar – 1 teaspoon.
  4. Garlic – 2 cloves.
  5. Onion – 1 medium onion.
  6. Bay leaf – 2 leaves.
  7. Cloves – 3 buds.
  8. Allspice peas – 3 pieces.
  9. In front of the sharp one – 1 ring.
  10. Salt – 1 teaspoon.
  11. Sugar – 1 tablespoon.
  12. Vegetable oil (if desired) – 2 tablespoons.

The next step is preparing the brine. To do this, bring water to a boil in a separate saucepan and fill the jar full to the neck. Cover with a metal lid and wait for half an hour. Pour this water back into the pan and repeat the process.

While the water boils, put salt, sugar and vinegar in a jar (if you like canned sunflower oil, you can add that too).

The boiling water is ready - pour it into a jar, and you can roll it up. Lowering it sideways, twist it a little so that the bulk ingredients dissolve. Now you can put it upside down, cover it with a blanket and leave it for 24 hours. After this time, remove the blanket, place it correctly, and leave it in this position for a week (make sure that the jars are not exposed to direct sunlight). After this, the preservation can be placed in long-term storage.

Pickled sweet tomatoes with a spicy taste for the winter

If you want to get not only tasty, but also beautiful tomatoes, put tomatoes and peppers of different colors in jars, alternating yellow and red.

Ingredients for 1 liter jar:

  • 400-500 g firm tomatoes;
  • half a capsicum (green);
  • 1 clove of garlic;
  • 1 bell pepper (yellow);
  • sweet pea;
  • sugar;
  • salt;
  • vinegar.

Place all the spices in washed jars. Place tomatoes and peppers on top, pour boiling water (steep) and leave for 20 minutes. Pour the liquid into a measuring cup to measure the marinade. Add 100 g of sugar and 50 g of salt per liter. Boil the marinade, pour into jars, add 2 tbsp to each jar. l. vinegar and roll up. Turn upside down and leave to cool at room temperature.
