Don salad for the winter is a dish of the Don Cossacks, passed down through generations to preserve the recipe.
Over time, of course, there were many variations of Don salad. Cucumbers, carrots, apples and cabbage began to be added to the classic tomato and pepper salad. But the basis is always green tomatoes, which the Don region is rich in until October.
The main secret of this salad is that most often the vegetables cannot be processed, but are placed fresh in jars. And after that they are sterilized in jars. Thanks to this feature, when you open a salad in winter, you will be able to enjoy the smell and taste of summer.

Cooking according to recipe
First, thoroughly wash all the vegetables. Peel the pepper and cut it into rings. We will do the same with the onion. Peel the cucumbers and remove the ends. If our green vegetables have a bitter taste, then let's try pre-soaking them in cool water for several hours.
We cut tomatoes into 6 parts, cucumbers into slices, onions into half rings, peppers into rings. After this, take a large deep pan and put the processed and chopped vegetables there. Add salt, pepper, a few bay leaves and a little sugar (so that our salad is not too sour). Leave for 40 minutes to form vegetable juice.
Wash the jars with soda, thoroughly rinse off the product under running water. Throw the lids into boiling water and leave in the saucepan for a few minutes.
For internal sterilization of containers we will use a microwave oven and boiling water. So, pour some water into our jars and put them in the oven for 2 minutes. We make sure that the water does not boil away. After this, carefully remove them, pour out the water and place them upside down on a clean towel to remove excess liquid.
For external sterilization we need a wide pan. We pour water there. We do the same with banks. That is, we introduce water so that it does not reach the neck by 3 cm. Place the jars in a saucepan and check the appropriate amount of liquid. We pull it out. Bring the water in the pan to a boil and place a napkin on the bottom.

Place the salad along with the juice in sterile jars. Press down well with a spoon and cover with lids. We try to quickly place the glass containers in a pan of boiling water (the boil should be low so that excess liquid does not get into the salad). Leave for 20 minutes. This time will be enough for the jars to be thoroughly sterilized. Just as quickly, we take out our containers and roll them up. This should be done with all remaining banks.
After seaming, be sure to check whether liquid is leaking out. This can be done using a regular napkin. Next, we take our salad to a cool room, turn the jars upside down and leave them under a warm blanket until they cool completely. Donskoy salad – classic
The classic recipe remains the most popular at all times. Green tomatoes, fresh cucumbers plus peppers and the aroma of summer in winter are guaranteed to you.
Ingredients:
- Tomatoes (green) – 2 kilograms
- Cucumbers (fresh) – 2 kilograms
- Pepper (variegated bell pepper) – 1 kilogram
- Onion (onion) - to taste
- Vinegar (6%) per 0.7 liters - 1 tablespoon
- Salt, sugar, bay leaf, black pepper - to taste.
Preparation:
First, we prepare all the products. We wash all the vegetables, peel the cucumbers and onions, trim the tomatoes. Remove the seeds from the pepper.
Pepper and onion rings mode. Cut the tomatoes into 6 pieces or slices, cucumbers into slices.
Place the prepared vegetables in a large container. Salt, sweeten and pepper to taste. We put a couple of bay leaves. Without disturbing, leave for 30 minutes to release the juice.
Wash the jars well. Boil the lids for a couple of minutes and sterilize the jars.
Now put the salad in jars and fill them with the released juice. We set it to sterilize for 15-20 minutes for a 0.7 liter jar.
After removing, before rolling, add 1 tbsp to each jar. vinegar. After seaming, place the jars on the lid and wrap them until cooled.
In order to remove the bitterness present in green tomatoes, they should be soaked in cold water for several hours.
Traditional Donskoy salad
This recipe for Donskoy salad is traditional and passed down from generation to generation in Don Cossack families. The original recipe does not include such an ingredient as sugar. However, you can add it, this will make the taste of the salad more expressive. The required amount of granulated sugar is 3 tbsp. l.
To preserve salad according to a traditional recipe, you will need the following products:

- Well-washed tomatoes and cucumbers should be chopped into slices, peppers should be cut into strips, and onions into rings.
- Garlic should be peeled and crushed using a press or garlic press.
- Next, you should mix the vegetables in a large container, stir well and leave for 15 minutes so that they brew and release juice.
- Then add sunflower seed oil, acetic acid, salt and black peas to the vegetable mixture and mix everything well
- Next, the salad preparation must be scattered into sterile jars and placed in a container to sterilize the product for 15 minutes.
After 15 minutes have passed, the jars should be rolled up with metal lids, turned upside down and wrapped in a blanket for 20 hours until cool. After that, the jars need to be put in the refrigerator for 4 days so that they cool completely.
Recipe for Don salad according to I. Kravtsov
I. Kravtsov is the author of the book “Soviet Home Canning.” And it was in it that the original recipe for Donskoy salad from fresh vegetables was presented. The quantity of these products is based on a one-liter jar.
Ingredients:
- Tomatoes – 0.65-0.7 kilograms
- Pepper (Bulgarian) – 0.3 kilograms
- Onion (onion) – 0.2-0.25 kilograms
- Greens (parsley) – 0.1 kilograms
- Oil (sunflower) –60 milliliters
- Sugar – 15 grams
- Salt – 15 grams

Preparation:
Cut tomatoes, peppers and onions into slices and pour everything into a mixing bowl. Pour chopped parsley into it, add spices, salt and sugar. Season with vinegar and let stand for 20 minutes, stirring occasionally.
After the vegetables have released their juice, we begin to put the mixture into jars shoulder-deep. Press the vegetables until the juice covers them. We distribute the remaining liquid from the pelvis into jars. Add the specified amount of oil to each jar.
We put it in a basin for sterilization. Half-liter jars for 25 minutes, and liter jars for 35 minutes. After finishing, immediately roll it up and put it in a dark place.
It is advisable to separate peppers, tomatoes and onions equally into jars.
Classic recipe
The leading place among all Donskoy salad preparations for the winter is occupied by the classic recipe. It is he who absorbs all the freshness and aroma of summer vegetables. This salad for the winter is good as an addition to a variety of dishes, it will turn out to be a favorite independent snack, it will also become a decoration for the table and not only for everyday life.

How to prepare a classic Don salad:
All vegetables are thoroughly washed. The stalks of tomatoes are removed, the tips and peels are removed from cucumbers, the seeds and stalks are removed from peppers, and the onions are peeled.
Bell peppers and onions are cut into rings. Tomatoes are cut into 6 pieces or slices if they are small or very large. Cucumbers are chopped into slices.

Take a large saucepan and add the prepared ingredients, add salt and sugar, pepper and bay leaf to taste. Leave the salad to juice for 30 minutes.

Donskoy salad for the winter

Ingredients:
- Tomatoes, peppers and cucumbers - in equal proportions

- Vegetable oil – 1 tablespoon per 1 liter

- Vinegar 9% -2 teaspoons per 0.8-1 liter jar

Preparation:
All ingredients are cut as for a regular salad that you eat in the summer. We also cut the garlic into slices. We put everything in one container. Mix carefully. Add salt and taste; if it’s not enough, add more. Knead.
We begin to put it into jars. Pour the juice remaining in the container into jars with vegetables. Pour vinegar and vegetable oil into each jar.
Before adding vegetables, the jars were simply washed well and the lids were sterilized with boiling water.
Place fabric on the bottom of a suitable container and place the jars. Add water to the level of the dishes. When the juice in the jars rises to the level of the salad and the water boils, cover with lids and set aside for 20-30 minutes. We take out one can at a time and roll it up. Turn it over, put it on the lid and cover it with something warm.
Until sterilization begins, you can add salad to the jars so that they are filled.
Cooking according to recipe
We wash the vegetables thoroughly. Peel the cucumbers and cut off the ends. If they are bitter, soak them in water for a couple of hours. Cut the tomatoes into 6 parts. Carrots - in circles. Pepper - in half rings. Finely chop the cabbage. We wash the greens.
Place greens (whole sprigs) and allspice into sterilized jars. Lay out the salad in layers (at your discretion), fill with brine, cover with lids, and leave in a warm place for 4 days.

Cucumber salad

- Next, all the vegetables should be placed in a common container, salted, sprinkled with pepper and left until the juice appears.
- After the vegetables have absorbed the juice, they need to be scattered into canning containers and filled with the remaining liquid.
- Then the containers with the snack should be placed in a container of water and boiled for 20 minutes so that the contents are well sterilized.
After the procedure, jars of snacks should be rolled up with metal lids, turned over, wrapped in a thick blanket and left for 24 hours.
Donskoy salad with vegetables
One of everyone's favorite salads with pickled vegetables.
Ingredients:
- Tomatoes – 2 kilograms
- Cucumbers – 2 kilograms
- Bell pepper – 2 kilograms
- Onions – 2 kilograms
- Sunflower oil – 0.25 l
- Sugar – 6 tablespoons
- Salt – 3 tablespoons
- Vinegar 9% – 150 milliliters
- Allspice – 1 tablespoon
- Cloves – 5 pieces
- Coriander (ground) – 1 tablespoon
Preparation:
We wash, clean and trim off excess. Chop into large slices. Pour out the oil. Salt and sprinkle coriander, throw in cloves and allspice. Add sugar and put everything on fire. Bring to a boil and simmer for 15-20 minutes. The mass will boil down and settle and a lot of juice will be released. Pour in the vinegar and stir. Cook for another 5 minutes.
Pack the salad into sterilized jars and lids. Twist well and turn over.
It is better to prepare jars of different sizes - from 0.4 liters to liters - in order to lay out the entire salad.
Cossack salad with carrots and cabbage
As we can see, some preparations of the Don appetizer contain cabbage, others contain carrots, but you can prepare the Cossack salad for the winter according to a recipe that contains both cabbage and carrots. For this we need:
- 2 kg of a mixture of green and brown tomatoes;
- head of cabbage;
- 1.5 kg carrots;
- 3 kg of bell pepper;
- a bunch of dill and parsley;
- spices to taste;
- 500 grams of salt;
- peppercorns.
First of all, as usual, we clean the carrots, remove the seeds and stalks of bell peppers and tomatoes, and then wash all the vegetables. Next, cut the tomatoes into slices, carrots into semicircles, peppers into strips and shred the cabbage. After this, sterilize the jars and put a saucepan with 9 liters of water on the fire, where we dissolve the salt and boil the brine for 10 minutes.
While the brine is being prepared, mix all the vegetables thoroughly, put a couple of sprigs of greenery and a few peppercorns on the bottom of the jar, and put the salad on top of them, which is then filled with brine. Next, close the jars with lids and place them in a warm place for three days.
After the allotted time, the brine from the jars is poured into a saucepan, brought to a boil and again poured into the jars with the snack. And after that, according to the principle of preparing “Traffic Light”, the blank is rolled up with lids and placed under a blanket, bottom up, for a couple of days, after which the jars are taken to the cellar or pantry, where they can be stored for a year.
Donskoy salad with cabbage
One of the various variations of Don lard is with cabbage. Fresh, unusual and unexpected.
Ingredients:
- Tomatoes (green-brown) – 2 kilograms
- Cucumbers (fresh) – 2 kilograms
- Apples (green, sour) – 1.5 kilograms
- Head of white cabbage – medium
- Onion – 1 kilogram
- Pepper (sweet) – 1 kilogram
- Pepper (chili) – 2 pieces
- Sunflower oil – 1 liter
- Salt and pepper
- Dill bunch
Preparation:
We wash and clean the necessary products. Cut apples, tomatoes and cucumbers into slices; for rings - peppers, onions; Shred the cabbage and finely chili. Place everything in a stewing dish, add oil and simmer for 1.5 hours over low heat. Salt, sweeten and immediately roll up.
Turn the jars over, wrap them up and leave until cool.
“Donskoy” with garden herbs
As it turned out, parsley and horseradish perfectly complement and refresh the usual classic recipe for Donskoy salad.
Ingredients:
(Indicated based on a 0.5 liter jar.)
- Tomatoes (unripe, brown) – 0.3 kilograms
- Cucumbers – 0.6 kilograms
- Onion – 0.150 kilograms
- Parsley - a bunch;
- Vinegar (9%) –10 grams
- Sunflower oil –10 grams
- Garlic – clove;
- Bay leaf, dill inflorescence - to taste
- Horseradish, coriander - to taste
- Sugar – 1 teaspoon;
- Salt – 0.5 teaspoon.
Preparation:
Wash vegetables - peel if necessary and chop. We cut cucumbers into slices, tomatoes into 3-5 millimeter slices, parsley - the smaller the better. Mix everything in a suitable container.
Put chopped garlic, dill, bay leaf, a little horseradish into a pre-sterilized jar and add half of the vegetable mixture. Add sugar and salt, pepper, coriander, and cloves. Add lettuce up to the shoulders of the jar.
Pour boiling water over the jars and place to sterilize for 10 minutes. Roll up.
Donskoy salad without bell pepper
For the winter, you can prepare a simplified version of this preservation. It is suitable for those who do not like sweet peppers.
Despite the absence of this ingredient, the salad is in no way inferior to traditional recipes.
Products:
- Brown tomatoes - 350 grams.
- Fresh cucumbers - 500 grams.
- You need to take 100 grams of onion.
- You need 1 clove of garlic.
- Dill, horseradish, spices, sugar, salt, vinegar - a dessert spoon each.

How to prepare Donskoy salad without bell pepper:
Vegetables are washed, peeled and cut. Cucumbers are cut into rings, tomatoes and onions are chopped into half rings. All ingredients are mixed.
Place a clove of garlic, a little dill and horseradish on the bottom of the sterilized jars. The salad is filled up to half the jar, after which the spices are added. You can take cloves, coriander, ground peppers, bay leaves. Next, omit sugar, salt, vinegar, vegetable oil. Then return to adding vegetables again.
The jars are filled with boiling water and sent for sterilization in a pan of boiling water for 10 minutes. Instead of a steam bath, you can use a microwave. Leave the winter salad there for 4 minutes. Then you need to roll it up, turn it upside down and cover it with a blanket to cool. This process usually takes 6 hours. That's it, now we transfer the salad to a storage place until winter.
Do not pour water all the way to the neck of the jar, as the vegetable oil may splash out during the sterilization process.
Donskoy salad in winter from tomatoes and cucumbers
The peculiarity of this salad is that it is prepared from what is in the garden at the time of rolling. The proportions are indicated for 6 kilograms of vegetables.
Ingredients:
- Tomatoes, peppers, cucumbers, onions and garlic – 6 kilograms
- Sunflower oil – 150 milliliters
- Sugar – 4 tablespoons
- Salt – 6 tablespoons
- Vinegar 9% – 100-150 milliliters
- Black hot pepper
- Allspice
- Bay leaf – 2-3 pieces
Preparation:
Trim the ends of the cucumbers and roughly cut them into quarters or halves. Cut the onion into half rings - smaller than cucumbers. Tomatoes and peppers in half rings, not too small. Squeeze the garlic through a press. We put everything in one bowl. Salt and sweeten - mix and leave for half an hour to allow the juice to drain.
Add the bite and oil. In prepared jars, washed with laundry soap and rinsed with running water, place the salad up to the hangers. We begin sterilization in a basin. After the water boils, wait 40 minutes. You can twist it.
It is best to take tomatoes that are not ripe.
Salad with both carrots and cabbage
Elementary ingredients for a crisp salad that tastes like summer in winter.
Ingredients:
- Tomatoes (green-brown) – 2 kilograms
- Cucumbers (fresh) – 2 kilograms
- Pepper (sweet) – 4 kilograms
- Head of white cabbage
- Carrots – 2 kilograms
- Dill and parsley - 1 bunch each
- Celery and horseradish - 1 bunch each
- Salt (per 10 liters) – 0.65 kilograms
- Pepper (allspice)
Preparation:
Wash and trim vegetables and herbs. Cut the tomatoes into slices, carrots into circles, peppers into half rings, cabbage into thin and fine pieces.
We put greens (not chopped) and peppers into jars. Vegetables can be placed in any order without interfering. Pour the brine into the jars, cover with lids and send to a warm place for 4 days.
Afterwards, pour the brine into the pan. As soon as it boils, turn it off and immediately roll it into jars. Send to a cold place to cool.
Carrot and cabbage salad
How to make a “Don” salad for the winter with cabbage and carrots? Very simple. After all, preparing this dish does not require much effort and time.
So, what should you buy for a winter salad? This:
- green-brown tomatoes – 2 kg;
- fresh cucumbers – 2 kg;
- a head of white cabbage;
- carrots – 2 kg;
- sweet pepper – 4 kg;
- dill, parsley, celery, horseradish - one bunch each;
- salt (per 10 liters) – 650 g;
- allspice.
Salad without sterilization
It's just quick and doesn't require sterilization. A minimum of effort, and the taste of your favorite childhood salad is the same.
Ingredients:
- Tomatoes (green) – 3 kilograms
- Carrots – 1 kilogram
- Onion (onion) – 1 kilogram
- Pepper (Bulgarian) – 1 kilogram
- Oil (vegetable) – 0.3 liters
- Sugar – 5 tablespoons
- Salt – 4 tablespoons
- Vinegar (9%) – 0.1 liters
Preparation:
After preparing the ingredients, chop the tomatoes as desired. Grind the carrots in a meat grinder, cut the onion and pepper into half rings. Place everything in a container - mix, add salt and sugar. Stir and season with oil and vinegar. Mix again and let it brew for 2 hours. Then simmer for one hour. - 1.5 kg of green tomatoes;
- 500 grams of red tomatoes;
- 1 kg carrots;
- 500 grams of bell pepper;
- 500 grams of onions;
- a glass of vegetable oil;
- half a glass of vinegar 7%;
- 2 tablespoons salt;
- 4 tablespoons of sugar.
According to the recipe with a photo of Donskoy salad for the winter, it is very simple to prepare, since the principle of preparing the appetizer is similar to creating a traditional Cossack preparation.
First, we clean and wash the vegetables, remove the stems from green tomatoes, scald and peel red tomatoes, and remove the seeds from bell peppers. - Vinegar 9% – 1 teaspoon per jar

Preparation:
We cut tomatoes into large slices, cucumbers into 5 mm thick half rings, onions into feathers, peppers into medium slices.
Place onions, peppers and cucumbers in a bowl and add salt. Lay out the tomatoes and stir carefully so they don’t bruise. We put it into 700 gram jars - there are 8 pieces. We distribute the remaining yushka between the jars. Place in almost warm or almost hot water. Cover with a lid and wait for the water to boil. I'll time it for 15 minutes. We take it out. We put aspirin and vinegar in each jar. Roll up, turn over and cover lightly.
Donskoy salad, rolled in layers
An ordinary salad in an unusual form - rolling in layers gives it an indescribable look and elegant taste.
Ingredients:
(Composition for 6 l.)
- Tomatoes (green-brown) – 1 kilogram
- Cucumbers – 1 kilogram
- Cabbage (white) – 1 kilogram
- Carrots – 1 kilogram
- Sweet peppers (multi-colored) – 2 kilograms
- Dill – 50 grams
- Parsley – 50 grams
- Horseradish – 2-3 leaves
- Salt – 0.2 kilograms
- Water – 3 liters
Preparation:
Grate the carrots, cut the onions and peppers into half rings, cucumbers and tomatoes into slices, chop the cabbage. Do not mix ingredients.
Place herbs (parsley and dill sprigs) and horseradish leaves into pieces into sterilized jars. Arrange the vegetables nicely in the jars in layers.
Dissolve salt in boiling water and boil for 5 minutes. Pour the resulting brine over the vegetables.
Leave covered jars at room temperature for 3 days.
Drain the brine from the jars and boil it for 5 minutes. Then remove from heat and pour over vegetables. Roll up the jars, turn them over and cover with a blanket. Keep cool.
Donskoy salad of brown tomatoes and cucumbers
Composition (for 5–5.25 l):
- brown tomatoes – 2 kg;
- cucumbers – 3 kg;
- sweet pepper – 1.5 kg;
- dill – 100 g;
- vegetable oil – 140 ml;
- table vinegar (9 percent) – 140 ml;
- salt – 70 g;
- ground black pepper - to taste.
- Wash the cucumbers, cut off their ends, and soak in cold water for 2 hours. Then cut into circles or semicircles.
- Wash the tomatoes, cut into 6 slices, cut off the seals near the stalks.
- Wash, dry, chop the dill.
- Wash the pepper, cut off the stalks, remove the seeds. Cut the pepper into rings or half rings.
- Mix vegetables with dill, pepper and salt. Leave to steep for an hour and a half - during this time the vegetables will release juice.
- Place vegetables in sterilized jars. Pour vegetable oil and vinegar into each jar. Pour in the juice released from the vegetables.
- Place the jars in a pan of water and sterilize for 15–25 minutes.
- Seal the jars tightly with metal lids using a seaming wrench. Turn it over.
- Cover with something warm and leave to cool. After a day, move the jars to the pantry.
The vegetables in the salad are crispy, so it seems like it was just prepared from fresh vegetables.

Quick salad “Donskoy”
A delicious salad prepared in just 45 minutes.
Ingredients:
- Tomatoes (green) – 2 kilograms
- Cucumbers – 2 kilograms
- Allspice dill – bunch
- Vinegar (9%) – to taste
- Salt and pepper (peas) - to taste
- Vegetable oil - to taste.
Preparation:
Wash the vegetables and remove the stems. Cut into any shape, add salt and stir. While the jars are being sterilized, the salad is infused for 10 minutes.
Scald the jars and lids with boiling water. Pour vinegar and oil into a jar and add vegetables.
Let's roll up. After rolling, we hide it under a blanket and send it to a dark and dry place.
Vegetables for salad can be cut into any shape, but coarsely chopped ones look more interesting.
