A line of canned sauces under the Uncle Ben's trademark appeared in our retail outlets in the 90s. Thanks to advertising, the new product attracted attention, everyone wanted to try it. The sauces were indeed very tasty, but salaries were delayed and prices were high. Our inventive housewives replaced the famous preparation with their own, domestic one and began to prepare the Uncle Bens salad themselves for the winter at home.

It was not difficult to do this, because our gardeners have enough of what is included in its composition. And our housewives have experience in inventing a wide variety of preparations, for example, cucumber lecho, recipes for which you will find by following the link.

I liked the salad, it caught on, but there is not and cannot be a single option, because we came up with it ourselves. Some people think that the most delicious recipe is made with zucchini, others with eggplants, there are options without these vegetables.

The main ingredient is tomatoes. It is on the basis of tomato sauce that this appetizer is prepared, and thanks to other ingredients and properly selected spices, it turns out very tasty, just lick your fingers. I suggest you look at several options for this winter preparation.

Ankle Bens eggplant salad for the winter - you'll lick your fingers

This is a really tasty salad. Eggplants are in perfect harmony with various vegetables and spices. Take note of this. In winter, you will be happy to open jars that will remind you of summer.

Ingredients:

  • tomato juice - 3 liters
  • bell pepper - 500 gr. (without seeds and stalks)
  • peeled eggplants - 750 gr.
  • garlic - 3 medium sized heads
  • sugar - 1 glass
  • salt - 2 tbsp. l.
  • sunflower oil - 1 cup
  • vinegar essence (70%) - 2 tbsp. l.
  • dry mustard - 1 tsp.
  • hot ground pepper - 0.5−1 tsp.

Step-by-step description of the recipe:

  1. Wash the tomatoes, trim off bruises and small damaged areas. For preparation we need tomato juice. You can do it in any way available to you. If you have an auger juicer that will clean the juice from skins and seeds, then this is an ideal option. But if not, then you can grind the crushed tomatoes through a sieve. But if for some reason you don’t want to do this, then you can prepare a preparation with skins and seeds.
  2. Pour tomato juice into a suitable sized bowl. Add all the spices and seasonings specified in the recipe, except vinegar and hot pepper - sugar, salt, mustard, vegetable oil. Place on the stove and after boiling, cook for 50 minutes over low heat.
  3. In the meantime, let's take care of the vegetables, first you need to wash them. Peel the garlic and chop finely. Remove bell peppers from stems and seeds. Peel the eggplants. Cut the peppers and blue peppers into cubes. The size depends on your preference. You can cut it into small cubes, then Uncle Bens will look more like a sauce. Or you can cut it larger if you want the vegetables to stand out in the salad.
  4. Place prepared vegetables in boiled tomato juice and bring to a boil. Add vinegar essence and ground hot pepper. But don’t add all the pepper at once, try it first and, depending on how hot you like it, adjust the amount to your taste. You can also adjust the amount of sugar and salt to your taste.
  5. Boil for 20 minutes, but do not leave the workpiece unattended, stir periodically so that it does not burn.
  6. When the salad is ready, reduce the heat to low and, without removing from the stove, place in sterile jars. Roll up the lids, which must first be boiled in hot water.

This preparation is perfectly stored all winter even at room temperature.

Recipe No. 4 (with unripe tomatoes)

This preparation has a sweet and sour taste of gravy. Rice has been added to the traditional set of vegetables, which adds thickness and makes the salad more satisfying.

Some recipes call for half the zucchini, replacing the other half with zucchini. In addition, Ankle Bens is prepared for the winter only from eggplants. The taste is excellent - you'll lick your fingers.

Ingredients needed to prepare the salad:

  • 4.5 kg of tomatoes (green or slightly brown);
  • 1.5 kg of bell pepper;
  • 450 g steamed rice;
  • 150 ml table vinegar 9%;
  • 1 or 2 pods of hot pepper;
  • carrots, zucchini (you can take zucchini) and onions - 1 kg of all components;
  • 300 g refined sunflower oil;
  • salt - 3 tbsp. l.;
  • ¼ cup sugar.

How to prepare a salad? The most labor-intensive cooking procedure is preparing the vegetables. They need to be washed, dried and crushed. Then the zucchini, carrots, onions, tomatoes and hot peppers are twisted through a meat grinder. Sweet peppers are cut into large cubes.

Pour the vegetable puree into the pan and heat until boiling. Add granulated sugar, salt, sunflower oil heated in a frying pan (it will give a peculiar aroma) and boil for a quarter of an hour. While boiling, be sure to stir the brew so that the appetizer does not burn. Caution should be exercised as the mixture may splash.

Rinse the rice and place it in a container with the vegetable mixture. Cook the contents of the pan for another 15 minutes. Sweet pepper is added last. After another 20 minutes, add vinegar. The salad is placed in sterile jars while boiling. It is then sealed and covered with a blanket to allow for slow cooling. This amount of ingredients will make approximately 8 liter jars of salad. Such preservation can be stored even in a warm room.

A tender and aromatic vegetable appetizer appeared on the table back in the nineties. It goes well with pasta, potatoes, chicken, and beef, and goes well with different dishes. Many housewives roll up Anx Bens for the winter. Zucchini for salads is grown in summer cottages and vegetable gardens, sold fresh at the market and in stores quite inexpensively, and has a pleasant taste and delicate texture. If in the previous version the salad included eggplants, then here we will use zucchini. This vegetable has practically no distinct taste of its own, but despite this, it is very popular in preparations. Its peculiarity is that it is able to absorb the taste of the products with which it is prepared, while enriching the dish with its beneficial properties.

Required Products:

  • zucchini - 2 kg.
  • tomatoes - 2 kg.
  • sweet pepper - 1 kg.
  • garlic - 200 gr.
  • salt - 2 tbsp. l. with a slide
  • sugar - 200 gr.
  • vegetable oil - 200 ml.
  • vinegar 9% - 100 ml.

Cooking method:

  1. Wash the tomatoes, remove the core, cut into slices and pass through a meat grinder. Scroll through half a portion of garlic together with the tomatoes.
  2. Transfer to the bowl in which you will cook the salad. Add peeled and diced zucchini, salt, sugar, vegetable oil. Mix well, put on the stove and cook for 30 minutes.
  3. Remove seeds from bell pepper and cut into strips. Pass the remaining garlic through a garlic press.
  4. After boiling the tomatoes and zucchini for half an hour, add chopped peppers and chopped garlic. Boil the mixture for 15 minutes, stirring occasionally.
  5. At the end, add vinegar, stir and cook for another 5 minutes. We put the hot snack into jars. They need to be sterilized in advance by any method available to you, and the lids must also be treated with boiling water.

To ensure high-quality and tasty Uncle Bens, use recently ripened vegetables that are undamaged and not overgrown.

Recipe No. 2 (zucchini with tomato)

Meat dishes and poultry go well with a zucchini salad called Uncle Bens. It has an original sour-sweet taste with a hint of spice.

List of ingredients for preparing the salad:

  • unripe zucchini - 2 kg;
  • sunflower oil - 250 ml;
  • sweet pepper (necessarily red) - 500 g;
  • onion heads - 3 - 4 pcs.;
  • 1 large head of garlic;
  • table vinegar - 60 g;
  • 1 liter of drinking purified water;
  • a tablespoon of table salt.

Procedure for canning snacks:

  1. Wash all vegetables and cut into equal parts.
  2. Boil syrup from sugar and water, add salt and add tomato paste, sunflower or olive oil.
  3. Boil chopped zucchini in this mixture. It is enough for about 10 minutes to pass after the sauce boils.
  4. The next step is to add the remaining vegetable ingredients to the simmering pan. The boiling time is again about 10 minutes.
  5. Crush the garlic under pressure, mix with vinegar and pour them into the pan with the salad. Stir the contents of the pan and cook for another 10 minutes.
  6. Now it's time to put the snacks into sterile jars to seal them tightly.
  7. After reaching room temperature, the workpiece is lowered into a cool cellar.

Uncle Bens for the winter from zucchini with tomatoes and carrots

Another snack option where carrots and onions are added. Additional ingredients make the winter preparation juicy, tasty, and healthy.

You will need:

  • tomatoes - 3 kg.
  • zucchini - 3 kg.
  • carrots - 1.5 kg.
  • bell pepper - 1.2 kg.
  • onions - 0.5 kg.
  • garlic - 5-6 cloves
  • vegetable oil - 300 ml.
  • peppercorns - 10 pcs.
  • cloves - 6-7 buds
  • sugar - 1.5 cups
  • salt - 3 tbsp. l.
  • vinegar 9% - 100 ml.

How to cook:

  1. Wash the tomatoes, trim off all unnecessary parts and make tomato juice from them. Pour into a bowl or large saucepan.
  2. Prepare vegetables. Grate the peeled carrots on a coarse grater. Peeled zucchini, cut the bell pepper into cubes, cut the onion into quarter rings.
  3. Place all the vegetables in a bowl with tomato juice, add sugar, salt, vegetable oil, peppercorns, cloves. Mix everything well, put on the stove, let it boil and cook for 30 minutes.
  4. Add garlic, vinegar, passed through a press, stir and cook for another 10 minutes.
  5. Place the finished salad in sterile jars, screw on the lids, let cool and store.

The salad will look beautiful if the vegetables are cut into cubes or cubes of the same size.

Cooking technology for “Uncle Bens” with zucchini

Homemade Uncle Bens snack for the winter is very simple to prepare:

  1. Vegetables are washed and peeled if necessary.

This recipe is interesting because it perfectly combines zucchini and eggplant. You can also use tomato paste instead of tomatoes.

Ingredients:

  • zucchini - 1.5 kg.
  • eggplants - 7 pcs.
  • onion - 200 gr.
  • sweet pepper - 5−6 pcs.
  • hot pepper - 1−2 pcs. depending on size
  • vegetable oil - 200 ml.
  • tomato paste - 3 tbsp. l.
  • water - 0.5 liters
  • sugar - 1 glass
  • salt - 1 tbsp. l.
  • vinegar - 100 ml.

Prepare according to the recipe:

  1. Let's prepare the vegetables. Peel the zucchini. If you have young vegetables, then you don’t have to remove the seeds. If you have older specimens, it is convenient to remove the seeds with a spoon by cutting the zucchini in half.
  2. Cut the onion into quarter rings. Cut zucchini, eggplant, and bell peppers into medium-sized cubes. Remove the seeds from the hot pepper and cut into small pieces.
  3. Make tomato sauce. Pour water into a bowl, add sugar, salt, tomato paste, vegetable oil, mix everything well.
  4. Place all the prepared vegetables in a large saucepan, add tomato sauce, stir well.
  5. Boil for 20-25 minutes, stirring occasionally. Then pour in vinegar and boil for another 5 minutes.
  6. Place the salad in clean, sterile jars and cover with lids.

Recipe No. 3 (with bell pepper and tomato sauce)

Several vegetables have been added to the ingredients of this winter preparation: sweet peppers, tomato sauce and carrots. The salad is suitable not only for side dishes and meat, but can also be an independent snack. Zucchini is considered a unique vegetable, even after heat treatment it practically does not lose useful microelements.

For canning you should prepare:

  • 0.5 l jar of Krasnodar sauce;
  • 2 kg of young zucchini;
  • 800 g onions;
  • 70 ml regular vinegar;
  • 700 g sweet pepper;
  • 1 kg of tomatoes;
  • a glass of granulated sugar;
  • 1 tsp. citric acid powder;
  • 250 ml vegetable oil;
  • 0.5 cups salt;
  • 600 g carrots;
  • 3 tsp. curry seasoning (optional).

Vegetables are thoroughly washed and then chopped. Zucchini is cut into cubes, peppers into long strips, onions into thin half rings, tomatoes into small slices, and carrots are grated.

To prepare Ankle Bens sauce for the winter, pour 600 ml of water and vegetable oil into a saucepan according to the recipe. Add sauce, granulated sugar, salt. This mixture should boil for about 5 – 7 minutes.

Vegetables are added to the marinade one by one. First comes the zucchini. After everything boils, a quarter of an hour should pass. Then peppers and onions are placed in the container. When the water boils, reduce the heat and simmer the vegetables for another 10 minutes. Now it’s the turn of carrots and tomatoes.

Gradually, the liquid released from the vegetables evaporates, and the mass becomes thick. But you should keep in mind that the vegetable mass will not be homogeneous, like caviar. At this time, you can pour in vinegar and add citric acid. At the same time, add the curry and boil the contents of the pan for another 2 - 3 minutes.

Place the salad in glass jars, which must first be sterilized. After this, they are hermetically sealed. After cooling, you can take them to the basement for long-term storage or put them in a closet in the apartment.

How to make Uncle Bens sauce for the winter with apples and plums

An interesting recipe that will perfectly replace store-bought ketchup. It harmonizes perfectly with pasta or other main courses, meat. It can be used to prepare pizza, lasagna and other dishes.

Products for the recipe:

  • tomatoes - 3.5−4 kg
  • onions - 500 gr.
  • apples - 500 gr.
  • plums - 1 kg.
  • sugar - 150 gr.
  • salt - 2 tbsp. l.
  • vinegar 9% - 150 ml.
  • cinnamon - 1 tsp.
  • cloves - 1 tsp.
  • red hot pepper - 2 tsp.

Cooking method:

  1. To prepare tomato sauce, you need to make tomato juice and it is better if it is without skins and seeds. Use either a juicer for this, or pass the juice through a sieve.
  2. Remove the seeds from the plums, cut the apples into pieces, and remove the seeds. Grind onions, apples and plums through a meat grinder. Place the prepared ingredients into a deep cup, add salt and sugar.
  3. Let it cook over low heat. Cooking time is approximately 1 hour 40 minutes, the sauce should thicken.
  4. Fold the gauze into 4 layers. Place cloves, cinnamon and hot pepper in the middle. Make a bag out of gauze and tie it well with thread.
  5. Pour vinegar into the sauce, lower the bag of seasonings and cook for another 20 minutes. Remove the bag of seasonings. Place the sauce in sterile jars and close the lids. Send the cooled workpiece for storage.

Recipe No. 1 (basic)

Zucchini salad prepared this way is considered traditional. Recipes for such preparations are great for vegetarians.

Required Products:

  • 1 kg of zucchini or zucchini of milky ripeness;
  • olive or sunflower oil - 150 g;
  • garlic head;
  • 150 g sugar;
  • curry (Indian seasoning) - 2 tsp;
  • capsicum hot pepper - 4 pcs.;
  • 0.5 tbsp. l. salt;
  • 50 g of ordinary table vinegar.

Step by step canning:

  1. Wash the zucchini and dry.
  2. Cut vegetables into small cubes or bars.
  3. Peel the tomatoes. To do this, first make cross cuts on the tomato. After that, put them in boiling water and boil for 2 minutes. Remove and place in cold water. The vegetables should now peel easily. Grind the pulp into pieces.
  4. After peeling the onion heads, cut into thin half rings.
  5. Prepare the marinating mixture: pour vinegar according to the recipe and oil into a container, add salt, granulated sugar, and curry seasoning. Boil.
  6. Add zucchini or zucchini cubes to the marinade and cook for 10 minutes.
  7. Add chopped peppers and onions to the container. Boil for another 10 minutes.
  8. Place the tomatoes in a saucepan with the zucchini and boil the same amount.
  9. The next step is to add crushed garlic and boil the vegetables for about two minutes.
  10. Place into jars and screw the lids on tightly. While cooling, the jars should be upside down.

Classic Uncle Bens recipe

The classic sauce recipe does not include too many ingredients, but that doesn’t make it any worse. The rich vegetable sweet and sour taste will delight any gourmet.

Required:

  • tomatoes - 2 kg;
  • bell pepper - 700 g;
  • carrots - 400 g;
  • vegetable oil - glass;
  • garlic - 6 cloves;
  • sugar - 140 g;
  • salt - 40 g;
  • vinegar (9%) - 25 ml.

According to taste and desire, you can add any chopped herbs, hot or ground red pepper.

Preparation:

  1. Tomatoes are peeled and chopped in a blender.
    Advice! You can use a meat grinder.
  2. Boil the tomatoes for a quarter of an hour under the lid.
  3. Add chopped vegetables, except garlic, and simmer for another 20 minutes.
  4. Now it’s the turn of spices, oil and garlic cloves that need to be chopped. At the same time, add chopped herbs and finely chopped hot pepper to the sauce.
  5. Another 5 minutes of boiling, and the sauce is ready to be packaged in sterile jars. Hermetic sealing is the main condition for the preservation of canned food.
