We need to grind them. This is approximately the mass obtained in a blender. But then I made several more manipulations, more about them later. Then we chop the peppers and garlic. Features of preparing adjika

Salad jars for the winter “Zamanikha” must be sterilized and washed thoroughly before this procedure. Experienced housewives advise using baking soda. It not only kills germs, but also makes glass containers for winter preparations perfectly clean. After washing, the jar can be sterilized in the oven, microwave or over boiling water.

If you choose the option with an oven, then the sterilization time is about 20 minutes at a temperature of 130 degrees. If you decide to sterilize the adjika container in the microwave, then each jar should spend about three minutes in it. Don't forget to add a couple of tablespoons of water to the jar. You can sterilize the container over boiling water. Pour liquid into a small saucepan and bring to a boil. A special grid for the jar is installed on top. The jar is placed for a couple of minutes (until all the droplets of moisture are gone).

Place the finished adjika in hot jars. We screw them with metal lids, turn them over, and let them cool. You can even wrap it in an old blanket or padded jacket. After cooling, put it in a storage place (basement, pantry or refrigerator).

Advice. It is better to taste for salt after the mixture has cooled. The taste of hot adjika will be slightly different from a cold snack.

  • 200 ml oil.

Before cooking, all vegetables are thoroughly washed, cleaned of dirt and dried. The stalks of tomatoes are removed in advance, and the tails, internal valves and seed chambers of peppers are cut out. The garlic is immediately peeled from flakes and divided into several cloves.

Having finished with the preliminary preparation, you can start slicing. All tomatoes are cut into small pieces and ground using a meat grinder. After this, add oil to a small saucepan and bring to a boil. Then the ground tomato, mixed with sugar and salt, is poured into the container. While boiling, the mixture is thoroughly mixed. The tomatoes are stewed for an hour, after which the gas stove should be turned down slightly. If the tomato mixture seems under-salted during cooking, then you should not add salt to it, since you need to check the appetizer for salt only after it has completely cooled.

In parallel with preparing the tomato mixture, you can start preparing other ingredients. Peppers are cut into small pieces and processed in a meat grinder. You should also grind all the peeled garlic in it. 40 minutes after the tomatoes boil, peppers and garlic are added to the pan.   • kilogram of tomatoes;
  • 800 g apples;
  • four carrots;
  • 100 g pepper;
  • 200 ml oil;
  • 50 g salt;
  • pepper.

The main ingredient of this dish is tomatoes, which create the flavor of the seasoning. That is why, to prepare snacks, you need to use only fresh and ripe tomatoes. First, all the tomatoes are washed and cut into two equal parts. Then you should start preparing the apples. They are completely peeled and the core is cut out. Carrots and sweet peppers are also chopped.

All prepared ingredients are ground in a meat grinder, and the resulting mixture is poured into a large cauldron. The container is placed on a gas stove and brought to a boil. In this case, the adjika needs to be stirred periodically with a spoon so that it does not start to burn. The vegetable mixture is prepared for an hour. At the end of cooking, add a little garlic, sugar, salt and vinegar. All this is cooked for another 10 minutes, after which the adjika is poured into jars.   • vinegar 9% - 1 glass
  • garlic - 300 gr.
  • chili pepper to taste

This adjika is easy to prepare.

  1. Wash and clean all the vegetables. Naturally, we remove the cores from apples, and the partitions and seeds from peppers. After this, chop the vegetables one by one. Here you can use a meat grinder or blender. The blender makes it quite fine, so I prefer an electric grinder.

2. Place the chopped vegetables in a large saucepan, bring to a boil and simmer for about 1 hour.

3. Pour sugar, salt, vegetable oil and vinegar into the vegetable mixture.

Just recently I received a comment about the large amount of vinegar in this recipe, and I want to say that this is a matter of taste. For such a large volume of vegetables (5.5 kg) it’s just right for my family’s tastes. But if in doubt, use less vinegar.

4. Finely chop the garlic (you can also pass it through a meat grinder), and also add it to the almost ready adjika.

5. For spiciness, add hot pepper if desired and to taste. We like it spicy, since it's adjika.

6. Cook for another 5 minutes and place in sterilized jars.

  • garlic - 200 gr.
  • red hot pepper - 250 gr.
  • vinegar 9% - 200 gr.
  • sugar - 5 tbsp. l.
  • salt - 5 tbsp. l.

1. Wash, peel and chop all vegetables using a blender.

2. Chop the garlic.

3. Pass tomatoes, sweet and bitter peppers through a blender.

Sometimes it happens that hot peppers are difficult to grind in a blender and get stuck - add a few tomatoes to it and the process will go easier

4. Finally, add sugar, salt and vinegar.

5. Mix everything well and place in sterilized jars.

You can store such adjika in any other container, but then it will be stored much less. I don’t risk storing adjika with tomatoes and bell peppers for more than a month without sterilization - it may ferment.
