Pickling is a type of canning of vegetables, during which lactic acid is formed (it is a natural preservative). Pickled vegetables have a high nutritional value; they have a beneficial effect on the gastrointestinal tract, destroy harmful bacteria, increase immunity and prevent infectious diseases.
IMPORTANT! If you have diseases associated with increased stomach acidity: gastritis, stomach ulcers, gastroduodenitis, then you are strictly prohibited from consuming pickled vegetables.
Preparation

Recipes: how to ferment and pickle at home?
At this stage of time, there are numerous recipes for pickling garlic, each of which makes the presented product unique in its own way.
In Armenian
To prepare this recipe you need the following ingredients:
- young garlic - quantity as desired;
- Apple vinegar;
- salt;
- water.
Having prepared the ingredients, you can start preparing pickled garlic:
- Peel the heads of young garlic, cut off the bottom with roots, and wash well.
- Place the heads tightly in the jar (either whole or in separate cloves).
- Prepare the marinade at a ratio of 1:2. Take 0.5 liters of water per 1 liter of apple cider vinegar, stir and add about two tablespoons of rock salt.
- Stir the marinade until completely dissolved and pour into a jar with garlic.
- After a few days, pour fresh, identical marinade into the jar.
- Do these steps for 40 days.
- For the last time, pour 1 liter of water, half a tablespoon of rock salt and vinegar into the jar.
- Store in a dark place.
The delicacy will be ready by September.
Whole heads like at the market
The following products are needed for cooking:
- garlic;
- salt;
- water;
- hot peppers;
- horseradish leaves;
- allspice with peas;
- Bay leaf;
- dill, cherry leaves (to taste).
After preparing the products, you should perform the following steps:
- Place a pot of water on the fire. Boil.
- Add salt (about two tablespoons) and stir until completely dissolved.
- Place in a cool place to cool the solution.
- Remove the garlic heads from excess peels and place tightly in jars. You also need to add some horseradish leaves, allspice, and a piece of hot pepper.
- Fill the jars with the cooled solution and put them in a cool place for 3 weeks.
- If necessary, you can periodically add boiled water to the brine.
After three weeks, the garlic will be ready. In this form, it can stay with you for several months. If you want to increase the shelf life, you can preserve it. But before that, you need to pour new brine into the jars.
With beets
To prepare this recipe, you need the following products:
- garlic;
- beet;
- black pepper;
- carnation;
- salt;
- sugar;
- vinegar.
Having prepared the ingredients, you can start preparing the recipe:
- Peel the garlic heads. Place the vegetable in boiling water for 1 minute. After a while, pour cold water over it.
- Cut the beets into thin pieces.
- Pack the beets and garlic tightly into the jars, alternating them.
- Place a saucepan with 1 liter of water on the fire along with salt, sugar, black pepper and cloves.
- Remove the solution from the heat and pour 100 ml of vinegar into it.
- Pour the marinade into jars and place them in a cool, dark place.
The product will be completely ready in three days. If you want to preserve it, you should sterilize the jars in hot water.
With other ingredients
You can also cook garlic with cabbage and carrots. The cooking technology is similar to the previous recipes.
Lightly salted garlic with fruit tree greens
This garlic is perfect as a snack on the table.
Ingredients:
- garlic in cloves or heads;
- salt – 80 grams;
- fresh herbs for pickling;
- leaves of fruit trees;
- water – 1 liter.
Salting procedure:
- The water is sent to the fire and brought to a boil, the salt dissolves in it.
- Add the herbs and leaves and continue cooking for about ten minutes.
- The finished brine is cooled.
- The prepared garlic is placed in sterilized glass jars, filled with brine, and closed with nylon lids.
- The vegetables are kept in the room for about five days, then moved to a cold place for storage.
As you can see, there are two main ways to preserve garlic – dry and in brine. In the first case, garlic is able to preserve almost the complete list of vitamins it contains. But eating it in its pure form is not very pleasant, since it will become quite salty. This garlic can be stored for up to nine months.
Using brine allows you to get a fairly tasty preparation for the winter season, which is quite suitable as a separate dish.
How to store for the winter?
In order for the delicacy to be stored as long as possible, it is necessary to keep it in the dark and constantly maintain a cool temperature. This is best done in the cellar. Before twisting, the jars must be disinfected in hot water (at least 5-10 minutes) so that they do not contain excess bacteria. The jars must be tightly sealed to prevent air from entering them.
You can also store garlic at room temperature.
ATTENTION! Sometimes garlic that is stored at room temperature may change color. You should not be afraid of this, because such changes will not harm you. However, if you still want to avoid this, then try to use only a young variety of garlic grown at your own dacha, and not bought in a store.
How to dry garlic correctly
To preserve garlic reserves in winter in this way, it is best to choose varieties that are distinguished by their pungency.
When drying garlic, you need to carefully separate its heads into cloves and clean them thoroughly. After this, cut the garlic into about 3-5 mm thick and place it on a baking sheet or fine-grained sieve for further drying in the oven at a temperature of 60°C.
Dry the workpiece for six hours, regularly turning the slices over to ensure even drying. The garlic obtained in this way is cooled and placed in a jar with a tight lid. Next, cook the marinade. Thoroughly dissolve 100 grams of salt and sugar in 1.5 liters of water. After boiling for five minutes, the liquid is cooled and then the jars are poured into it so that the vegetable is completely immersed in the brine. The jars are covered with a lid, but not screwed on, and left on the table at room temperature for 5-8 days. It is advisable to place the containers in a basin or wide dish, since during fermentation some of the brine may run out. Why do you need a damp table? For the same reason, the marinade level is constantly monitored and, if necessary, either regular boiled water or the remains of the original prepared solution, which has been stored in the refrigerator all this time, is added.
After about a week, the brine from the jars is poured into a saucepan, brought to a boil and returned. Seal the preservation with sterile lids. Pickled garlic arrows do not require slow cooling under a blanket.
Pickled garlic arrows
What will be needed:
- garlic arrows;
- vinegar - 100 ml;
- salt - 60 g + 10 g;
- sugar - 50 g;
- water - 1.0 l.
Let's prepare step by step:
- Wash the garlic arrows thoroughly. Cut into 8-11 cm pieces.
- Next, you should get rid of excess bitterness in the arrows. Place them in a colander, place in boiling water, and blanch for 2 minutes. Then rinse with cold water.
- Boil jar lids for 5 minutes.
- Next you should prepare the brine. Combine salt, sugar and water in a saucepan. Boil. Pour in vinegar and remove from heat.
- Arrange the chopped garlic arrows vertically, quite tightly, in pre-sterilized jars.
- Pour in hot brine and seal with lids.
Turn the jars upside down. Wrap with warm cloth. Wait until completely cooled down.
Pickled garlic in Armenian
Many people love Caucasian cuisine for its unique flavors. For example, garlic heads according to the Armenian recipe will be moderately hot and spicy, it will have an original taste, characteristic of all Armenian dishes.
Ingredients:
- 7 kg garlic;
- 1 liter of 9% vinegar;
- 0.7 l apple cider vinegar 6%;
- 1 kg beets
Preparation:
- After harvesting from the garden, the garlic is immediately refined and the tops are cut off, leaving stumps 2;2.5 cm high; the roots are flush with the bottom; Numerous clothes are carefully removed from the heads, without touching the cloves with just one flake, so that the garlic does not fall apart.

- Keep garlic in an acidic environment for 30-40 days, during which time it ceases to be hot. After this, pour out the vinegar solution, and (we don’t do this) rinse the garlic with cold water.2. Then fill it with strongly salted and sweetened (to taste) cold water, add 0.7 liters of natural 6% apple cider vinegar. If this is not the case, then the same 9% alcoholic natural vinegar will do (0.5 liters per 1 bucket of marinade).
- Now all that remains is to grate 1 kg of beets on a fine grater. Pour 0.5 liters of water into the beet pulp, mix and squeeze it into a bucket through cheesecloth. The solution takes on a ruby color. In this marinade until ready to stand for 15-20 days and store in it constantly. Beetroot juice will color the stalk and skin of the garlic, giving it its original presentation.

After you put the seasonings in the jars, add the garlic. Place them tightly together so that there is no empty space. And leave it to stand.
And proceed to preparing the marinade yourself.
To prepare the marinade you will need:
- water;
- two tablespoons of salt;
- two tablespoons of sugar;
- 100 milliliters of vinegar.
Bring the water to a boil, add all the ingredients listed earlier, add vinegar at the very end. And boil for three minutes.
All! The marinade is ready.
Ladle the cool, hot marinade into jars right up to the neck. Screw on the lids and turn them upside down. Be sure to check the jars for leaks. Make sure nothing is leaking, bubbling or hissing.
After making sure that everything is going well and according to plan, cover the jars with a warm blanket, rug or towel and let them sit like that for two days at room temperature.
And after the allotted time, put it in a cool, dark place.

Garlic, pickled whole heads
What will be needed:
- garlic - 1.0 kg;
- filtered water - 600 ml;
- vinegar - 30 ml;
- salt - 30 g.

- To preserve garlic, you need to select strong, dense heads of garlic.
- Prepared heads of garlic need to be processed. Remove stem and husk. Then transfer to a bowl and fill with boiled filtered water. Keep in water for half an hour.
- Then the steamed garlic should be rinsed with running water.

- beets - 300 g;
- water - 1 l;

- garlic - 500 g;
- water - 100 ml;
- orange - 200 g;
- lemon - 100 g;
- sugar - 180 g;
- cinnamon - 10 g.
